To make my Lean Green Mac & Cheese:
- Combine the instructed half cup of water with the macaroni from the Annie’s packet and add as much spinach as you want/can (I add as much as I can fit in the bowl). You can’t tell in the pic, but there IS macaroni under all that spinach. Microwave for two minutes.
- After two minutes, add about a third of a cup of shelled edamame (I got mine from TJ’s, but you can get it at many grocery stores). The edamame have a nice texture and add some protein.
- Microwave everything for another minute to minute and a half.
- Add some salt and pepper and EAT UP!
