Totally Nutritionista-approved, for breakfast, lunch, or dinner. I would go with black beans, since refried beans tend to have extra fat and calories. You could also use whole wheat tortillas to get a few grams of extra fiber.
I don’t know anything about Crossfit, but I do like their motto: “hard exercise works.” YUP.
“To huevos rancheros and Maya Angelou”- Huevos Rancheros
So I recently decided to get off my lazy butt and start working out. My cousin suggested something called Crossfit, which is a high-intensity, fast paced cross-training workout. So far I absolutely love it, its hard, but it’s great! But in order to keep up with the workouts, my coach suggested that I up my protein intake, especially since I’m a vegetarian.
So in order to follow a more protein packed diet, I thought that I would put aside the normal breakfast of cereal, and make some huevos rancheros. This breakfast was low-fat, low-cal and had lots of protein!
What you need:
2 egg whites
1/4 cup Fat-Free refried beans (or black beans)
Diced tomatoes
1 corn tortilla
Mexi-Cheese
Salsa
Potato wedges (optional)
1. Separate the 2 eggs and dispose of the yolks (for fluffier eggs add a drop of milk). Heat a small omelette pan on low-medium heat, spray with PAM.
2. While pan is heating, heat up refried beans in a microwave safe dish for about 2 minutes. Set aside. Then chop a small tomato.
3. When pan is heated, pour in egg whites and cook until it is completely cooked all the way through.
4. Microwave the corn tortilla in the microwave for 30 seconds. Place tortilla on plate and top with a little cheese. Then lay the flat egg whites on top of the tortilla and spread a thin layer of the beans on top of the egg. Then sprinkle with cheese and chopped tomatoes.
5. For the potatoes, I had already pre-cooked the potatoes the night before. I then sliced them into wedges and cooked them in the pan with a little onion powder. I cooked them until they began to brown.
*On friday night I also made a version of these huevos rancheros for dinner. But I also added some leftover fajita vegetables to the egg mixture. It was fantastic!
**I suggest for you to check out the crossfit gyms in your area. I am totally not an athlete and I am loving it. The results of this type of workout are supposed to be incredible! I go to my local Crossfit gym right after work and I feel great afterwards!
