Office-Proof Lunch: Brats and Greens

I’m officially ready for the rest of the week! I have breakfasts and lunches ready to go for the next few days.

I made my own version of Lean Cuisine. I’m going to call it Fat Cuisine: It’s got fat, but it’ll keep you lean! HA. First, I sauteed some local, organic Italian spicy brats in coconut oil and ghee.

Then, I removed them from the pan and added some roughly chopped onions (plus salt & pepper). Always keep the fat from your meats, guys! Not only does reusing the fat prevent waste, but it also tastes DELISH.

When the onions started to caramelize, I added a whole lot of Lacinto (dinosaur) kale.

Finally, I portioned everything out into containers so I can just grab one in the morning and go. Sausages and burgers are great for this because they’re already perfectly portioned.

Oh, and I had to post this pic of our kitties.

Charlie’s all, “You’re MINE,” and Olive’s like, “Meh, you bore me.” Ugh, we’re totally cat ladies.
