Friday Day in Food
Dinner, 8:00pm: Lean Green Mac & Cheese (instant organic mac & cheese with spinach and edamame)
I don’t know what it is about this combo, but it’s magical. I added some fresh ground black pepper and crushed red pepper for some spice. I also ended up eating another half a muffin for dessert. I can’t stay away from them! I like them because they’re not overly sweet and have a nice doughy texture. Also, it’s a muffin (aka, glorified cake, though this is a genuinely healthier version)! It was a carb-heavy meal, but I feel alright about it because I have a 12 mile training run tomorrow morning. Shush, I know carb-loading to improve performance is a myth, but it makes me feel more mentally prepared so I’m alright with it.
