Profile of a Healthy Eater: Stephanie
Welcome to another Monday edition of POAHE. This week, meet Stephanie. She loves her some spicy hot sauce, but wants to return her membership to the clean plate club. Another week, another kind of healthy eater…
- What’s the best thing about healthy eating? The way I feel - once you’re used to eating well you really pay for it the day after eating fatty, salty (albeit delicious) foods.
- Do you give your eating a label (e.g., vegetarian, vegan, pescatarian, high raw, etc.)? No, though I prefer to avoid meat when I can (I don’t miss it when it’s not there). Living with someone who can’t get on board with a meatless or vegan diet makes it tough to consistently eat that way myself.
- Favorite method of cooking and why? Grilling and roasting - brush veggies with olive oil, salt, & pepper and I’m set.
- Favorite versatile herb/spice? Hot sauce. On everything. Especially Frank’s Redhot.
- Best healthy sweet treat? Peanut or almond butter and a square of super dark chocolate. Also, whipped cottage cheese with honey and fruit or nut butter mixed in.
- Your go-to five-minute meal? Soup from Soupergirl, a huge salad, or an open face tofu salad sandwich.
- “Healthy” food you avoid like the plague? I really don’t hate many foods - does bleu cheese count?
- Who’s the person in your life that is the most baffled by how you eat? The fiance is supportive and eats whatever I make, but you will never convince him he will be “full” without eating meat. Paying more for better quality food is rough for him, too.
- What’s your healthy power/comfort food (the one food you know will get you through the day)? PB & J oatmeal (sensing my obsession with peanut butter?). Seriously decadent and fills me up for hours.
- If you could change anything about your diet, what would it be? I have a real issue with wasting food so I feel a strong need to clean my plate. Working on taking food home from restaurants. I’m also trying to be better about eating slowly and really enjoying what I’m eating instead of eating at warp speed all the time.
