Make It: Healthy, Homemade TV Dinners (or Lunches)
This week promises to be busy, so I wanted to make something tonight that I could eat the rest of the week for lunch or dinner with just a quick zap in the microwave.
I baked some sweet potatoes (400 degrees for an hour) and steamed some green beans (I had some leftover chick peas, so I threw those on top). When the potatoes were almost done cooking, I threw in two Dr. Praeger’s veggie burgers and one Quorn cutlet to bake. That’s it! Now I have three meals that I can take with me to work for lunch or eat for a ready-made dinner.
This is a perfect example of Mix & Match Eating. These meals are a combo of fresh (potatoes), frozen (green beans), and good packaged food (burgers). Healthy eating does NOT = time consuming or hard!
